i LOVE chocolate chip cookies. love them fresh out of the oven, love them chewy, love them fluffy, love them raw, love them just about anyway they come. :) every once in awhile i find myself feeling a bit adventurous...

normally my spins on the good ol' classic are good, enjoyable even, but they don't have the ability to modify my pine for the classic chocolate chip cookie. ...but then i tried pumpkin cookies with cinnamon chips.
this recipe is based on pamela's gluten free baking & pancake mix and her chocolate chip cookie recipe.
ingredients:
1/2 c. butter
1/4 c. white sugar
1/4 c. light brown sugar
1 egg
1 t. vanilla extract*
1 tb. pumpkin puree**
1 t. ground ginger
1 1/2 c. pamela's mix
1 c. hershey's cinnamon chips
cream butter and sugar
add egg and vanilla, beat
add pumpkin and ginger, beat together
add pamela's mix, beat
fold in cinnamon chips
place scoops of dough (~1tb) on a lightly greased or lined cookie sheet
flatten
bake for 12-15 minutes
i like to 'soft bake' them by pulling them out of the oven at ~10 minutes
and letting them cool for five minutes on the pan before cooling all the way on a cooling rack.
*not all vanilla extracts are gluten free but a gf version will absolutely be found at your local natural foods store
**be sure it is pumpkin puree and not pumpkin pie filling. i use libby's pumpkin puree.
