gluten free christmas treats part 2 - sour cream cookies

gluten free sour cream cookies 

sour cream cookies are an absolute childhood favorite of mine.  
just the thought of them brings memories of my brother and i helping our mom bake them every year - fighting over who gets to decorate them, munching on leftover dough, and indulging in the yummy cookies for days.  yes, i'm biased, but these are the best holiday cookies!  
they are very similar to sugar cookies but much, much better because they're not as sweet.  
if sweetness is your thing, you can always decorate with icing or frosting if you so desire.

i used my pamela's baking & pancake mix in my mom's recipe because it's my go-to for baking.  this mix is now available through amazon.com in hawaii (yay!  free shipping!) making it MUCH more affordable!

ingredients: 
1/3 c butter
2/3 c sugar
1 well beaten egg
1/3 tsp gf vanilla extract
1/3 c gf sour cream
2 1/2 c pamela's baking & pancake mix

cream shortening & sugar
add eggs, vanilla & sour cream
mix well
add 1 1/2 c flour using mixer
knead in remaining 1 c
place in slightly oiled bowl - allow to rest in refrigerator for 1-2 hours
roll out* - cut into shapes** & decorate***
bake @350 degrees for 10-15 minutes 
yield: ~2 dozen cookies 

*be sure to continue flouring your counter to reduce potential stickiness
**i used a round glass, rim dusted in flour to prevent sticking
***not all sprinkles are gluten free!  be sure to check labels and do your research, as always.  i used colored sugar crystals which are fine.

  1. Those look really good. I believe you can buy the baking mix at Whole Foods, Down to Earth, Mana Foods, and even some Safeway locations now.
